Here a very easy and tasty vegan recipe: the lemony vegan pesto. Great to cook with your favorite pasta or dress up a tuna and avocado tartar for the non-vegans!
Our Smart Fraîche Paradise
At Fresh, we have a smart secret garden from the Estonian island of Hiiumaa, one of the cleanest places on Earth. Thanks to it, we bring happy plants and freshness to the Fraîche office as easily as if you called Hiiumaa home.
Basil keeps growing from our smart paradise, which brings us to this recipe. Revisiting your pesto is a game we all love to play. In fact, once you have basil, you can make a dressing out of it and call it pesto 😉
Ready for a 5 minutes delicious revisited and vegan pesto!
What you’ll need:
- The freshest basil (and a LOT of it)
- some happy parsley
- 2 avocados
- Virgin olive oil
- 2/3 cloves of garlic
- 1 lemon juice
- salt and pepper
Take a blender and blend everything together. Yes, you got it, it’s that simple: e.v.e.r.y.t.h.i.n.g. Avocados, lemon juice, herbs, salt, pepper, garlic cloves and olive oil. Blend it all together for at least 5 minutes, make sure everything is smooth and you’re done!
You can keep it in a jar and in your fridge for dinner or lunch the next day but you can also offer it to someone you love, or to your boss (maybe you’ll get a reward for it, you never know!) But don’t forget to ask for a picture of the final result as I’m asking you to!
